  • 4 large heads garlic, roasted and peeled (see recipe)
  • 2 teaspoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • Freshly ground pepper to taste
  • Pinch cayenne pepper
  • 1 tablespoon coarsely chopped Italian parsley

Directions

    Chop the garlic with a knife until it forms a paste.

    Place in a bowl and stir in the olive oil, lemon juice, salt, pepper and cayenne.

    Stir in the parsley.
