- 1 pkg. penne noodles
- 1 red pepper
- 1 yellow pepper
- 2 green peppers
- olive oil
- kosher salt
- 1 onion
- 1 can diced tomatoes
- 2 garlic cloves, minced
- fresh basil
- fennel seed
Directions

1Cook noodles as directed. Slice peppers in 1/2 and hollow out inside. Place hollow side down on a cookie sheet. Wipe olive oil on the outside of peppers and sprinkle with kosher salt. Broil until peppers turn black (approximately 15 minutes). Wipe skin off with a paper towel and thinly slice. In a pan, add diced onion, diced tomatoes, garlic and fennel seed. Add peppers and toss with cooked pasta and fresh basil. Serve with Parmesan cheese.
