  • 8 medium (2 1/2 lb.) sweet red peppers
  • 1 cup oil
  • 1/2 c. lemon juice
  • 2 tsp. salt
  • 3 cloves garlic, crushed

Directions

    Wash peppers and drain well.

    Place peppers on cookie sheet, bake about 20 minutes in preheated 450° oven, or until skin becomes blistered and charred.

    Turn peppers with tongs every 5 minutes while baking.
