- 8 medium (2 1/2 lb.) sweet red peppers
- 1 cup oil
- 1/2 c. lemon juice
- 2 tsp. salt
- 3 cloves garlic, crushed
Directions

1Wash peppers and drain well.

2Place peppers on cookie sheet, bake about 20 minutes in preheated 450° oven, or until skin becomes blistered and charred.

3Turn peppers with tongs every 5 minutes while baking.
