- 3 Tbsp. olive or salad oil
- 4 garlic cloves, chopped
- 3 anchovy fillets, mashed
- 1/8 tsp. red pepper, crushed
- pinch of salt
- 4 peppers, quartered
Directions

1In a 2 1/2 quart casserole dish combine oil, garlic, anchovies, red pepper and 1/4 teaspoon salt.

2Add peppers, stirring to coat. Cook, covered on High 14 to 16 minutes until peppers are soft, stirring twice during cooking.

3Serve hot, warm or cold.
