- 6 large red peppers
- 1/4 to 1/2 c. olive oil
- fresh basil leaves or 1/2 Tbsp. dried
- salt and hot pepper to taste
- 1 garlic clove (optional), sliced (also very tasty without garlic)
Directions

1Wash, core and split peppers in half.

2Place on broiler pan lined with foil.

3Broil until skin is charred black.

4Remove and cover with foil and let stand for about 1/2 hour.

5Peel blackened skin and try to reserve any liquid from peppers in a bowl.

6Cut peppers into 1/2-inch strips.

7Place in bowl with liquid and add the rest of ingredients.

8Stir and allow to stand for about 1 hour before serving.

9Good as appetizer with Mozzarella or added to a sandwich.
