  • 3 gal. Small red potatoes, quartered
  • 1/2 cup garlic, chopped
  • 1-1/2 cups GREY POUPON Classic Dijon Mustard or Country Dijon Mustard
  • 3 cups butter, melted
  • 1-1/2 cups fresh parsley, chopped

Directions

    Spray 4 full (2-inch) hotel pans (or one [2-inch] third hotel pan for trial recipe) with cooking spray.

    Place potatoes and garlic in prepared pans; mix lightly.

    Cover tightly with foil.

    Bake in 350F-conventional oven for 45 minutes to 1 hour or until potatoes are just tender.

    Mix mustard, butter and parsley with wire whisk until well blended.

    Pour about 1 cup of the mustard mixture over potato mixture in each pan (or pour all of butter mixture over potato mixture for trial recipe); toss to coat.

    Bake, uncovered, an additional 15 minutes or until potatoes are tender.
