Ingredients
- 3 lbs plum tomatoes, cut in half
- 2 tablespoons extra virgin olive oil
- 8 garlic cloves, cut in large chunks
- 2 teaspoons dried basil
- 1 pinch coarse salt
- 1 pinch ground black pepper
- 12 teaspoon white sugar
Directions

1Toss all ingredients together.

2Pour onto a roasting pan.

3Arrange tomatoes cut side down.

4Roast in preheated 375F oven for 20-30 minutes.

5Remove skins and place tomatoes in a bowl.

6Drain oil from pan into bowl, and add additional olive oil to cover.

7Store, tightly covered, in refrigerator up to 4 weeks.
