Ingredients

  • 3 lbs plum tomatoes, cut in half
  • 2 tablespoons extra virgin olive oil
  • 8 garlic cloves, cut in large chunks
  • 2 teaspoons dried basil
  • 1 pinch coarse salt
  • 1 pinch ground black pepper
  • 12 teaspoon white sugar

Directions

    Toss all ingredients together.

    Pour onto a roasting pan.

    Arrange tomatoes cut side down.

    Roast in preheated 375F oven for 20-30 minutes.

    Remove skins and place tomatoes in a bowl.

    Drain oil from pan into bowl, and add additional olive oil to cover.

    Store, tightly covered, in refrigerator up to 4 weeks.
