  • 2 medium Mexican zucchini, cut into 1/4-inch-thick slices
  • 2 medium red peppers, cut into 1-inch pieces

Directions

    Preheat oven to 450 degrees F. Toss vegetables with dressing; spread into 15x10x1-inch baking pan.

    Hollow out both bread halves, leaving 1-inch-thick shells.
