  • 2 Tablespoons Olive Oil
  • 2 pounds Young Potatoes
  • 1/2 teaspoons Dried Thyme
  • 1/2 teaspoons Dried Rosemary
  • Salt And Pepper, to taste
  • 2 Tablespoons Fresh Parsley Leaves, Finely Diced

Directions

    Preheat oven to 400°F.

    Spread olive oil all over a large baking pan. Add potatoes and shake the pan to get the potatoes covered in oil. Season with dried herbs, salt and pepper. Shake the pan again.

    Bake at 400°F for 25 minutes, or until potatoes are fork tender and skins are crispy. Toss with fresh parsley. Serve hot.
