  • 4 chicken breasts minus skin and bone
  • Italian bread crumbs
  • 3 eggs
  • 1/2 c. milk
  • pinch of oregano
  • pinch of parsley
  • salt and pepper to taste
  • 1 c. Romano cheese
  • cooking oil

Directions

    Cut chicken into large pieces.

    Mix eggs, milk oregano, parsley, salt and pepper.

    Dip chicken pieces into egg mixture, then roll in bread crumbs.

    Pan-fry chicken in lightly oiled pan for 2 minutes each side.

    Place in 13 x 9-inch baking dish. Sprinkle with Romano cheese and bake at 400° for 5 minutes.
