Romano Fried Potatoes

  • 1/4 c. bread crumbs
  • 1/4 c. grated Romano cheese
  • pinch of salt
  • 1/4 tsp. pepper
  • 1/8 tsp. oregano
  • 1 clove garlic, minced
  • oil (for deep frying)
  • 4 large Idaho potatoes, peeled and cut into lengthwise strips
  • 2 eggs, beaten

Directions

    Mix bread crumbs, cheese, salt, pepper, oregano and garlic. Heat oil to 375°.

    Dip potato strips into beaten eggs, then into bread crumb mixture.

    Fry until golden brown on all sides.

    Put in a baking dish and bake in a 350° oven for at least 30 minutes or until tender.

    Serve hot.
