  • 1/4 cup fresh fresh lime juice
  • 2 Tbsp. grated gingerroot
  • 1 tsp. curry powder
  • 1 lb. boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
  • 2 limes, cut into wedges

    Heat oven to 400 degrees F.

    Mix first 4 ingredients in large bowl.

    Add chicken; stir to coat.

    Refrigerate 20 min.

    Place coating mix in pie plate.

    Drain chicken; discard marinade.

    Dip chicken in coating mix, turning to evenly coat both sides of each piece.
