  • 2 tablespoons olive oil
  • 2 medium onions, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 ribs celery, diced
  • 2 russet potatoes, diced
  • 2 Red Bliss potatoes, diced
  • 2 sweet potatoes, diced
  • 3 turnips, diced
  • 32 ounces vegetable stock
  • 32 ounces water
  • 3 bay leaves
  • 12 teaspoon ground cumin
  • salt and pepper

Directions

    heat olive oil in large stock pot.

    saute onions until translucent.

    add each vegetable one at a time in order (chop and drop).

    add stock and bay leaves.

    simmer 30 min until vegetables soft.

    add water, cumin, salt and pepper to taste.
