- Mozzarella cheese
- boned, skinned chicken breast halves (2 per person)
- 1 c. grated cheese (Parmesan)
- 1 c. bread crumbs
- melted butter, seasoned with 4 cloves
- 1 lb. fresh mushrooms, sliced
- 1 c. white wine or dry vermouth
Directions

1Dip breasts in crumbs.

2Brown chicken in garlic butter in large frypan.

3Arrange in large casserole, one layer.

4In same pan (do not wash), brown mushrooms; add white wine and simmer 3 to 5 minutes to get all juices from pan bottom.

5Pour over chicken in casserole.

6Add enough wine to 1/2 cover.

7Dot with small chunks of Mozzarella cheese.

8Bake at 350° for 1/2 to 1 hour.

9Cover if dish appears to be drying out.

10Can be made ahead except for baking.
