- 1 roasting chicken (about 6 lb.)
- 1 Tbsp. fresh rosemary, chopped
- 2 Tbsp. fresh parsley, chopped
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 1/4 c. olive oil
Directions

1Preheat oven to 350°.

2In a small bowl combine rosemary, parsley, salt, pepper and oil.

3After loosening the skin off the chicken, spread rosemary mixture under and over the skin.

4Place in a roasting pan and roast for 1 1/2 to 2 hours until chicken is golden brown and juices run clear. Yield: 4 to 6 servings.
