- 1 large clove garlic, minced
- 1 1/2 tsp. snipped fresh rosemary
- 2 Tbsp. olive oil
- 1 1/2 lb. baking potatoes, peeled and cubed
- 1/2 tsp. salt
- 1/8 tsp. freshly ground pepper
- 2 to 3 sprigs fresh rosemary (optional)
Directions

1In a large skillet, cook and stir the garlic and rosemary in the olive oil for 1 to 2 minutes over medium heat.

2Add potatoes, salt and pepper.

3Cook for 5 minutes, stirring occasionally. Reduce the heat to medium-low and cook about 20 minutes more, turning often, until the potatoes are brown and crisp.

4Garnish with the rosemary sprigs, if desired.

5Makes 3 to 4 servings.
