- 2 lb. potatoes
- 1/3 c. shortening
- 1 tsp. salt
- 4 slices bacon, diced
- 1/2 c. minced onion
- 1/2 c. shredded cheese
- 2 Tbsp. hot water
Directions

1Boil potatoes in skins.

2Cool, peel and shred.

3Melt shortening in skillet.

4Add potatoes and salt; cook until heated and yellow. Stir in bacon, onion and cheese.

5Press potatoes into a round flat cake pan and sprinkle with water.

6Cover and cook over low heat for 15 minutes or until crust forms on bottom.

7Shake pan once or twice to prevent burning.

8Place serving plate over potatoes and invert so crust side is up.

9Makes 5 to 6 servings.
