- 6 to 8 baking potatoes
- 1 can Ro-Tel tomatoes
- 1 lb. Velveeta cheese
- 1/2 green bell pepper, chopped
- 1/2 medium onion, chopped
Directions

1Bake potatoes until done.

2Allow to cool, then cut into bite-size pieces.

3(Skin may be removed or left on.)

4Cover bottom of large baking dish with potatoes.

5Cook bell pepper and onion until tender.

6Melt cheese; add tomatoes, cooked peppers and onions.

7Pour over potatoes.

8Cook at 350° for 15 to 20 minutes.
