- 1/2 c. butter
- 2 c. celery, diced
- 1 c. fresh oysters, or canned, chopped
- 4 c. bread crumbs
- 1 Tbsp. mayonnaise
- 1/2 c. chicken stock
- 1/2 c. fresh parsley, chopped
- 8 slices of beef roulade (have butcher cut)
- 1/2 c. beef stock
- sliced bacon
- 2 c. mushrooms, chopped
- 2 cans water chestnuts
- 3 small green onions
- salt and pepper
- 1/2 c. red wine
- sage to taste
- red wine to cover
Directions

1Saute 1 1/2 cups mushrooms, celery, water chestnuts, oysters and chopped green onions in butter about 10 minutes.

2Then mix in bread crumbs, mayonnaise, sage to taste, chicken stock, red wine, parsley and salt and pepper to taste.
