Rum Cherry Nut Cake

  • 1 (18 oz.) pkg. yellow cake mix
  • 4 eggs or Egg Beater equivalent
  • 1/3 c. rum
  • 1/2 c. margarine, melted
  • 1/2 c. finely chopped nuts
  • 1/2 to 1 c. confectioners sugar
  • 1 (3 3/4 oz.) pkg. vanilla instant pudding
  • 3/4 c. cooking oil
  • 1/3 c. water
  • 1/2 c. chopped maraschino cherries
  • 1/2 c. packed brown sugar
  • brandy or rum

Directions

    In large mixer bowl, combine cake mix, pudding mix, eggs, oil, rum and water.

    Beat at medium speed until well blended.

    Into 10-inch tube pan, pour melted margarine.

    Sprinkle with cherries, nuts and brown sugar.

    Pour in batter.

    Bake in 325° oven 45 to 60 minutes.

    When done, immediately remove cake from oven and pan, turning upside down on cake plate.
