- 3 lb. cottage cheese, small curds
- 1 cup softened butter
- 1 cup sugar
- 4 egg yolks
- 1 tsp. vanilla
- 1/2 cup dried apricots, raisins, nuts or other fruits for garnish
Directions

1Completely drain the whey (liquid) off the cottage cheese with a strainer.

2Allow to drain until no liquid is left.

3Cream the butter into the sugar and the egg yolks, mix well.

4Stir in the vanilla, mix well.

5Place a dish towel in a souffle dish and pour in the cheese mixture.

6Fold the towel over the mixture and place weigh down with a heavy object.

7A small plate that fits inside the dish works well with a large can used for a weight.

8Refrigerate for 24 hours and drain off any excess liquid.

9Unwrap the cheese and garish with apricots, raisins, nuts or other dried fruit of your choice.

10You can slice this into small slices if you desire.
