  • 1 pound field peas shelled
  • sage to taste
  • black pepper to taste
  • flour as needed

Directions

    Cook podded peas in boiling water to cover until tender- approximately 1 hour. Drain water.

    Mash peas with a potato masher or blend in a blender or food processor.
  3. 3
    Add black pepper and sage to taste. Mix well.

    Add 1 - 2 TBSP flour. With your hands, make sausage-like patties or links,or make hamburger size patties. Spray a heated skillet with non-stick spray or use a TBSP of olive oil or vegetable oil. Fry over med. heat until browned on both sides.
