Rustic Minestrone Soup

Ingredients

  • 2 tbsp olive oil
  • 1 None leek, sliced
  • 1 None red onion, sliced
  • 2 None carrots, peeled, halved and sliced
  • 2 stalks celery, sliced
  • 2 None potatoes, peeled and diced
  • 1 None zucchini, quartered and sliced
  • None Handful mushrooms, sliced
  • 4 cups stock
  • 1 x 14 oz can chopped tomatoes
  • 2.5 oz tubetti pasta
  • 1 x 14 oz can cannellini beans, drained and rinsed
  • 5.5 oz cooked ham, shredded

Directions

    Heat oil in a saucepan, add vegetables and gently saute for 5 mins.

    Add stock and tomatoes and bring to a boil. Turn down heat and simmer gently for 20 mins. Add pasta and simmer for 10 mins. Add cannellini beans and ham and heat through. Ladle into bowls and serve.
