Rustic Turkey Pot Pie

- 3 cups Flour
- 2 teaspoons Fresh Rosemary, Finely Chopped
- 1 teaspoon Kosher Salt
- 1 teaspoon Fresh Ground Black Pepper (more Or Less To Taste)
- 12 Tablespoons Unsalted Butter
- 13 cups Shortening
- 6 Tablespoons Ice Water
- 1 whole Egg Yolk, Lightly Beaten
- 1 Tablespoon Heavy Cream Or Milk
- 2 Tablespoons Butter
- 4 Tablespoons Flour
- 2 cups Chicken Broth
- 1/2 cups Milk
- 1 teaspoon Salt
- 1 teaspoon Fresh Ground Black Pepper
- 4 cups Cooked Turkey, Cubed
- 1- 1/2 cup Assorted, Cooked Or Canned And Drained (I Used Carrots, Green Beans And Pearl Onions)
Directions

1For the crust: In a food processor, combine flour, rosemary, salt and black pepper.

2Pulse a few times until incorporated.

3Add butter and shortening.

4Pulse again a few times until the mixture resembles little white peas.

5Add water by the tablespoonful.

6Pulse each time you add a tablespoon.

7Stop adding water once the dough becomes a ball.

8Wrap dough ball in plastic wrap and chill in the refrigerator for 1 hour.

9Preheat oven to 375 degrees F.

10For the filling: Heat butter in a saucepan over medium heat.

11Once butter is melted, stir in the flour.

12Cook for several minutes until the mixture becomes a paste and browns just a bit.

13Add broth.

14Cook for 4-5 minutes.

15Pour milk into a small bowl.

16Scoop out a little bit of broth from the pan and add it to the milk.

17Stir it and then add the milk into the pot.

18This will ensure that the milk doesnt curdle.

19Add salt and pepper to taste.

20Take pan off heat.

21In a separate bowl, gently mix turkey, veggies and the sauce mixture.

22Take a small taste and add salt and pepper if needed.

23Roll dough out into a circle.

24Place the circle of dough on a baking stone or baking sheet.

25Pile turkey filling in the center of the dough.

26Pull dough up and around filling to resemble a drawstring purse (the center of the filling mixture will still be exposed.

28In a small bowl combine egg yolk with cream or milk and brush it all over the dough.
