- 1 1/2 cups all-purpose flour
- 1/2 cup graham cracker crumbs (about 8 squares)
- 1/4 cup packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 1/2 cups buttermilk
- 1/4 cup vegetable oil
- 3/4 cup semi-sweet chocolate chips
- 1 1/4 cups miniature marshmallows, divided
Directions

1In a large bowl, combine the dry ingredients.

2Combine egg, buttermilk and oil; mix well.

3Stir into dry ingredients just until moistened.

4Fold in chocolate chips and 1 cup marshmallows.

5Fill greased jumbo muffin cups three fourths full.

6Sprinkle with remaining marshmallows.

7Bake at 375 degrees for 18-20 or until a toothpick comes out clean.

8Cool for 5 minutes before removing from pan to wire rack.

9Serve warm.
