  • strip cuts of round steak (any round)
  • 1/2 c. plus 1 Tbsp. sugar
  • 1 c. salt
  • 1 tsp. salt peter (sodium nitrate)

Directions

    Save half of mix and set aside.

    Rub 1/2 on meat.

    Refrigerate 3 days.

    Remove and rub on other half of saved mixture.
  5. 5
    Dry at room temperature for approximately 3 days.
