- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- 3 tsp vegetable oil
- 1 tsp kosher salt
- 12 oz paneer
- 16 oz frozen spinach
- 1 medium onion, chopped
- 1 tsp ground cumin
- 4 tsp minced garlic
- 1 tbsp minced ginger
- 1/2 tsp garam masala
- 1 medium green chili finely chopped
- 2 tsp ground corriander
- 1/2 cup plain yogurt
- 2 tbsp minced garlic
Directions

1In a large bowl, whisk together the turmeric, cayenne, 1 teaspoon salt and 3 tablespoons oil.

2Let the paneer cubes marinate while you get the rest of your ingredients together and prepped.

3Place a large nonstick skillet over medium heat, and add the paneer as the pan warms.

4In a couple of minutes give the pan a toss; each piece of paneer should be browned on one side.

5Fry another minute or so, and then remove the paneer from the pan onto a plate.

6Mine fell apart

7Add the onions, ginger, garlic and chile.

8Now here's the important part, saute the mixture until it's evenly toffee coloured, which should take about 15 minutes.

9Don't skip this step this is the foundation of the dish

10Add the rest of your spices and chili let cook 3-5 minutes if it gets dry add 1-2 tablespoons of water

11Add your spinach to the onions incorporate well together

12Turn the heat off add your yogurt a little at the time so it wont curdle after its all incorporated add paneer heat covered about 3-5 minutes serve I hope you enjoy
