- 2 tsp. fresh lemon juice
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/4 c. olive oil
- 1 1/4 c. safflower oil
Directions

1Combine egg, vinegar, lemon juice, mustard, salt and olive oil in blender.

2Whip; with machine running, add safflower oil, one teaspoon at a time.

3Refrigerate; keeps several weeks.
