1Cut the Kesseri cheese into 4x4-inch squares, dip into beaten egg and flour both sides and edges for the squares.

2This keeps it from melting away during cooking.

3Fry the squares in heated olive oil until golden.

4Turn off burner and immediately add brandy.

5Set afire with long match (for the brave at heart only, but traditional).

6Put out the flame with lemon juice.

7Serve sizzling with coarse bread (Italian or French).
