  • 1 kg Potatoes (I think that Maris Pipers that have started to get eyes make the best, sweet creamy mash)
  • 10 sage leaves
  • 1 spanish onion (white)
  • 4 tbsp butter
  • salt and pepper

Directions

    1. Peel, cut and boil the potatoes in salted water until cooked (about 20 minutes)

    2. Chop the onion, and cook in half the butter on a low heat so it is caramelized, add the sage.

    3. Mash the cooked potato with the other half of the butter until smooth.

    4. Stir in onions and sage mixture.
