- 3 hard-cooked egg yolks
- 1/4 c. fresh lemon juice
- 2 c. sour cream
- 1 tsp. sugar
- 1 Tbsp. mustard
- salt to taste
- 2 qt. tender young salad greens, such as Boston or bibb
Directions

1Mash the egg yolks and combine with mustard, lemon juice, sugar and salt.

2Vary proportion of lemon juice according to personal preference.

4Mix very well. Coat salad greens with the mixture and serve at once.
