- 5 lb. ground beef
- 4 Tbsp. Tender Quick curing salt
- 2 1/2 tsp. coarse pepper
- 1 1/2 tsp. mustard seed
- 4 tsp. liquid smoke
- 1 to 2 tsp. garlic salt (as desired)
Directions

1Mix all ingredients together and knead as for bread for 5 minutes.

2Knead each day for 3 days.

3On the 4th day, shape into long logs, approximately 3 rolls each recipe.

4Place on a jelly roll (or shallow) pan.

5Bake 8 hours at 125°.

6Turn once after 4 hours.

7Cool and refrigerate.

8Best if placed on a wire rack in pan when baked.
