  • 2 lb. lean ground meat
  • 2 Tbsp. Tender Quick (Morton)
  • 1 Tbsp. Accent
  • 1 1/2 Tbsp. liquid smoke
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1 Tbsp. coarse grind black pepper

Directions

    Mix ingredients well together.

    Divide in half and roll into logs.

    Wrap in wax paper or Saran Wrap.

    Refrigerate 24 hours. Cook on a rack over a pan of water for 3 hours at 250°.

    Cool, slice thinly and serve as sandwich meat, appetizer, etc.
