Salami Shell Salad

Ingredients

  • 3 c. large shells
  • 1/4 c. vegetable oil
  • 1 garlic clove
  • 10 to 12 parsley sprigs, stems removed
  • 1 bunch scallions, cut into 1 inch pieces
  • 2 tsp. oregano
  • 1 tsp. basil
  • salt and pepper
  • 1/4 lb. thinly sliced light salami, cut into strips
  • 6 Tbsp. grated Parmesan cheese

Directions

    Cook shells, drain.

    Rinse with cold water, drain well, put in medium bowl.

    Put oil and garlic in container of blender or food processor, process until garlic is pureed.

    Add parsley, oregano, basil, salt and pepper.

    Process until parsley is finely chopped. Pour dressing over shells and toss to coat.

    Add salami, cheese and scallions, toss again.

    Refrigerate until serving time.
