Salami Shell Salad

Ingredients
- 3 c. large shells
- 1/4 c. vegetable oil
- 1 garlic clove
- 10 to 12 parsley sprigs, stems removed
- 1 bunch scallions, cut into 1 inch pieces
- 2 tsp. oregano
- 1 tsp. basil
- salt and pepper
- 1/4 lb. thinly sliced light salami, cut into strips
- 6 Tbsp. grated Parmesan cheese
Directions

1Cook shells, drain.

2Rinse with cold water, drain well, put in medium bowl.

3Put oil and garlic in container of blender or food processor, process until garlic is pureed.

4Add parsley, oregano, basil, salt and pepper.

5Process until parsley is finely chopped. Pour dressing over shells and toss to coat.

6Add salami, cheese and scallions, toss again.

7Refrigerate until serving time.
