- 1 (1 lb.) can salmon, drained and flaked
- 1 Tbsp. lemon juice
- 1 c. grated carrots
- 1 small green pepper, diced
- 1/2 c. mayonnaise
- butter, melted
- 1 Tbsp. flour
- 1/2 c. milk
- 1/8 tsp. paprika
- 1 egg, beaten
- 2 slices white bread, cubed
Directions

1Spread salmon in a 1 1/2-quart casserole.

2Sprinkle with lemon juice.

3Fold in the next 3 ingredients.

4Blend 1 tablespoon butter with flour in saucepan until smooth; add milk.

5Cook until thick, stirring constantly.

6Remove from heat.

7Stir in paprika and egg. Fold into salmon mixture.

8Spread bread cubes over casserole; drizzle with butter.

9Bake at 350° for 25 to 30 minutes.
