Salmon Ball

Ingredients

  • 1 can (1-lb.) sockeye salmon, boned, skinned, flaked, and drained
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 Tbsp. lemon juice
  • 2 tsp. grated onion
  • 1 tsp. white horseradish
  • 1/4 tsp. salt
  • 1/4 tsp. liquid smoke
  • 3 Tbsp. parsley, chopped
  • 1/2 c. pecans, chopped

Directions

    Mix all but the parsley and pecans (use beaters or hand--DO NOT use food processor).

    Chill for several hours.

    Roll into ball shape.

    MIx parsley with the pecans and roll the salmon ball mixture in them until coated.

    Return to refrigerator.

    Serve with crackers.
