Salmon Casserole

Ingredients

  • 1 lb. can salmon
  • 1/4 c. shortening
  • 1 tsp. onion, finely chopped
  • 1 1/2 c. soft bread crumbs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • salmon liquid
  • about 1/2 c. milk
  • 1 tsp. lemon juice
  • 1/4 tsp. grated lemon rind
  • 1 Tbsp. chopped parsley
  • 1 egg, slightly beaten

Directions

    Saute onion in shortening until yellow.

    Add crumbs, salt and pepper, brown lightly.

    Drain salmon liquid in a cup and add enough milk to make 1 cup.

    Combine salmon, crumbs and liquid.

    Add remaining ingredients and blend, being careful not to crush salmon. Place in 8-inch greased casserole.

    Bake at 375° for 30 minutes.
