Salmon Casserole

Ingredients
- 1 lb. can salmon
- 1/4 c. shortening
- 1 tsp. onion, finely chopped
- 1 1/2 c. soft bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- salmon liquid
- about 1/2 c. milk
- 1 tsp. lemon juice
- 1/4 tsp. grated lemon rind
- 1 Tbsp. chopped parsley
- 1 egg, slightly beaten
Directions

1Saute onion in shortening until yellow.

2Add crumbs, salt and pepper, brown lightly.

3Drain salmon liquid in a cup and add enough milk to make 1 cup.

4Combine salmon, crumbs and liquid.

5Add remaining ingredients and blend, being careful not to crush salmon. Place in 8-inch greased casserole.

6Bake at 375° for 30 minutes.
