Ingredients
- 1 (1 lb.) can red salmon
- 2 c. elbow macaroni
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 c. chopped celery
- 6 Tbsp. butter
- 4 Tbsp. flour
- 2 c. hot milk
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1/2 lb. Cheddar cheese, shredded
- 1 (4 oz.) can chopped pimento
Directions

1Drain salmon.

2Reserve liquid.

3Cook macaroni.

4Saute onion, green pepper and celery in butter for 10 minutes.

5Stir in flour. Cook, stirring, for 2 minutes.

6Add milk; stir until thickened. Stir in reserved salmon liquid, salt and pepper and 2 cups cheese. Cook, stirring, until cheese is melted.

7Stir in pimento, salt and pepper.

8Combine macaroni and salmon mixture in a 1 1/2-quart casserole.

9Sprinkle with remaining cheese.

10Bake at 350° for 20 minutes or until very hot.
