  • 1 1/4 c. flour, sifted
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. corn meal
  • 1 egg, slightly beaten
  • 3/4 c. milk
  • 1 (1 lb.) can (2 c.) red salmon, drained

Directions

    Sift together flour, baking powder and salt.

    Stir in corn meal.

    Combine egg and milk; stir into dry ingredients until just combined.

    Break salmon into bite size pieces and fold into batter.

    Drop by rounded tablespoons into deep hot fat (375°). Fry until golden brown, about 4 minutes.

    Drain on paper towels. Serve with creamed English peas.
