- 1 1/4 c. flour, sifted
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1/4 c. corn meal
- 1 egg, slightly beaten
- 3/4 c. milk
- 1 (1 lb.) can (2 c.) red salmon, drained
Directions

1Sift together flour, baking powder and salt.

2Stir in corn meal.

3Combine egg and milk; stir into dry ingredients until just combined.

4Break salmon into bite size pieces and fold into batter.

5Drop by rounded tablespoons into deep hot fat (375°). Fry until golden brown, about 4 minutes.

6Drain on paper towels. Serve with creamed English peas.

7Makes 6 to 8 servings.
