Ingredients

  • 1 (15 1/2 oz.) can salmon
  • 2 c. soft bread crumbs
  • 1/3 c. finely chopped onions
  • 1/4 c. milk
  • 2 eggs
  • 2 Tbsp. minced parsley
  • 1 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. dried dill weed
  • dash ground pepper

    Preheat oven to 350°.

    Grease 8 1/2 x 4 1/2-inch loaf pan. Drain salmon, reserving 2 tablespoons liquid; flake into small pieces.

    In medium sized bowl, combine salmon and all ingredients. Place in prepared loaf pan or shape into loaf on greased baking sheet.

    Bake 45 minutes or until firm.

    (Salmon patties).

    Prepare salmon mixture as stated.

    Shape into eight 1 inch thick patties. In large skillet over medium heat, heat 2 tablespoons butter or oil.

    Pan-fry patties on both sides until golden brown.
