Ingredients

  • 1 can salmon
  • 1 c. bread crumbs
  • 1/2 c. mashed potatoes or rice
  • milk (just to moisten)
  • 2 beaten eggs
  • few drops lemon juice
  • 1/2 Tbsp. parsley
  • salt

Directions

    Mince salmon with a fork.

    Add crumbs, potatoes, eggs, seasoning and enough milk to moisten.

    Shape into loaf and bake at 350° for 1 hour.

    Serve with tomato sauce or creamed peas.
