- 1 can salmon
- 1 c. bread crumbs
- 1/2 c. mashed potatoes or rice
- milk (just to moisten)
- 2 beaten eggs
- few drops lemon juice
- 1/2 Tbsp. parsley
- salt
Directions

1Mince salmon with a fork.

2Add crumbs, potatoes, eggs, seasoning and enough milk to moisten.

3Shape into loaf and bake at 350° for 1 hour.

4Serve with tomato sauce or creamed peas.
