Salmon Loaf

Ingredients

  • 1 (16 ounce) can salmon (Red or Pink..your choice)
  • 12 cup dry breadcrumbs
  • 1 tablespoon lemon juice
  • 12 teaspoon salt
  • 18 teaspoon black pepper
  • 1 teaspoon parsley, fresh chopped (optional)
  • 12 cup hot milk
  • 2 tablespoons butter
  • 2 egg yolks
  • 2 egg whites

    Preheat oven to 350.

    Add the butter to the milk & heat, but do NOT boil.
  3. 3
    Mix all ingredients together EXCEPT the egg WHITES.

    Beat the egg whites until stiff & gently fold into Salmon mixture.

    Put into a buttered loaf pan or casserole dish.

    Bake, uncovered for 1 hour.
