Salmon Mousse

Ingredients

  • 3 Tbsp. lemon juice
  • 2 Tbsp. water
  • 2 envelopes gelatin
  • 2/3 c. boiling water
  • 2 stalks celery, chopped
  • 1/2 cucumber, chopped
  • 1/2 carrot, chopped
  • 1/4 tsp. pepper
  • 3 sprigs parsley, chopped
  • 3 sprigs dill, chopped
  • 1/2 c. mayo
  • 1 c. heavy cream
  • 1 tsp. salt
  • 1 large can salmon

Directions

    Mix first 3 ingredients.

    Add boiling water and mix.

    Add celery, cucumber, carrot, pepper, parsley and dill.

    Mix in mayo, heavy cream, salt and salmon.

    Mix well and chill overnight.

    I use a fish mold.
