Salmon Pie

  • 2 pie crusts
  • 1 1/2 c. mashed potatoes
  • 1 small onion
  • 1 egg
  • 1 (large) can salmon
  • salt and pepper

    Prepare mashed potatoes as you usually do with milk.

    It's a good way to use leftover potatoes.

    Chop onion fine; add 1 egg, salt and pepper to taste.

    I don't use salt.

    Pour into unbaked pie shell and top with second crust.

    Bake at 350° for 1 hour until golden color.

    Serve with creamed peas.

    An excellent meal.
