  • 1 (15 1/2 oz.) can pink salmon, drained
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 Tbsp. lemon juice
  • 2 tsp. minced onion
  • 1 tsp. prepared horseradish
  • 1 tsp. chopped jalapeno pepper
  • 1/2 tsp. liquid smoke
  • 1 c. chopped pecans, very fine
  • 4 Tbsp. fresh parsley, chopped very fine

Directions

    Combine salmon and cream cheese, mixing well.

    Stir in remaining ingredients, except pecans and parsley.

    Chill well. Shape into 12-inch long log and roll in pecans and parsley. Roll up in foil or plastic wrap.

    Chill well.

    Serve with assorted crackers.
