  • 12 oz salmon fillet
  • 2 tbsp maple syrup
  • 8 small rolls
  • None None FOR THE COLESLAW
  • 3 cups cabbage, finely shredded (use half red and half green)
  • 1 None carrot, grated
  • 1/2 None apple, cored and grated
  • 1 tbsp chopped parsley
  • 14 cup mayonnaise
  • 1 tbsp yoghurt

Directions

    Preheat the oven to 350°F. Line a baking pan with foil.

    Slice fish into strips. Arrange on prepared pan. Drizzle with maple syrup and season to taste. Bake 20 mins, until cooked to desired doneness.

    Meanwhile, for the coleslaw, combine cabbage, carrot, apple and parsley in a large bowl. Add mayonnaise and yogurt; toss to coat well. Season to taste.

    Serve salmon and coleslaw on rolls.
