- 1 large (15 1/2 oz.) can salmon
- 1/2 c. low-fat cottage cheese
- 2 Tbsp. finely minced onion
- 1 Tbsp. lemon juice
- 1 tsp. prepared white horseradish
- 1/2 tsp. salt
- 1/4 tsp. white pepper
Directions

1Clean the salmon of all bones and skin.

2If you wish you may mash the bones in with the salmon for the calcium they provide. Place the cottage cheese in a strainer and place under running water to clean off all milk.

3Pat the cottage cheese curds dry with a paper towel.

4Combine all ingredients in a bowl and mash until smooth and creamy.

5Chill in the serving bowl.

6Serve with crackers, toast point, or slices of cucumber and other fresh vegetables.
