Salmon Steaks With Mustard Sauce

Ingredients
- 4 salmon steaks (about 1 1/2 lb. total weight)
- 2 Tbsp. milk
- 1/4 c. flour
- salt to taste
- freshly ground pepper to taste
- 1/4 c. peanut, vegetable or corn oil
- 4 tsp. finely chopped dill or parsley
- 3/4 c. mustard sauce
Directions

1Dip steaks in milk.

2Remove and dredge on both sides in flour seasoned with salt and pepper.

3Shake off excess.

4Heat oil in heavy skillet until quite hot.

5Add steaks and cook on one side until nicely browned, about 5 minutes.

6Turn and continue cooking, basting often with the hot oil about 5 minutes.

7Serve with mustard sauce.

8Pour hot mustard sauce onto center of hot serving dish.

9Arrange steaks over sauce and dot center of each with teaspoon of chopped dill or parsley.

10Yields 4 servings.
