Salmon Vegetable Pie

  • 1 (7 3/4 oz.) can pink salmon
  • 1/2 small onion, thinly sliced
  • 1 c. thinly sliced zucchini
  • 1 1/2 c. grated Swiss cheese
  • 1/2 tsp. dill weed
  • 2 eggs
  • 2 Tbsp. each plain yogurt and mayonnaise
  • salt
  • 1 unbaked 9-inch pastry shell
  • 2/3 c. frozen peas

Directions

    Drain salmon; remove bones and skin.

    Flake into a bowl and mix with onion, zucchini, peas, cheese and dill weed.

    Beat eggs with yogurt and mayonnaise; stir into salmon mixture. Salt lightly to taste and turn into the pie shell.

    Bake at 350° for about 40 minutes or until filling has set and is lightly browned.

    Serves 4 to 6.
