Ingredients

  • 2 tablespoons butter
  • 1 leek, thinly sliced
  • 1/2 teaspoon salt
  • 1 garlic clove, minced
  • 1/4 cup dry white wine
  • 1 1/4 cups milk
  • 2 tablespoons flour
  • 1 (7 1/2 ounce) can salmon, drained and broken up
  • 1 cup green peas
  • 1 tablespoon chopped parsley
  • 4 lemon wedges

Directions

    In medium saucepan, saute leek with butter and salt. Add garlic and cook for 20 seconds. Stir in wine and cook for 1 minute, until evaporated.

    In large measuring cup, whisk together milk and flour. Gradually add to leek, stirring. Bring to a simmer. Simmer 2 minutes, or until thickened.

    Stir in salmon and peas and season to taste with salt and pepper. Cook, stirring, for 5 minutes, or until heated through. Serve topped with parsley.
